THE MESTIZO SOWING TIME (DIVERSE SOWING TIME)

SOME CHRONICLES ABOUT BOLIVAR EMPHASIZE ON HIS LIKING FOR salads, his like to see the roses while he opened the doors of his room, the fresh of the infusion scent waited on by Jose Palaces, his butler, and it is also known the interview he made with Jose Maria Alvarez, to hired him as the market-gardener for la Quinta.

The restoration works of la Quinta (1992-1999) rebuilt this space where nowadays we can reap several vegetables for an Ensalada Bolivariana (especial salad made by Bolivar) and a variety of aromatic plants, spicy and vegetables.

To make that kind of salad, today we would have lettuces, cabbages, beets, radishes, cubios, arracachas, potatoes, and corn. With these ingredients we could also prepare the olla podrida (typical Colombian food in the XIX century), described by more than one traveller of the XIX century in their chronicles of Bogotá marinated with the season of the thyme, laurel, marjoram, basil, salvia, guascas, small onions, coriander or parsley.

To treat his illnesses Bolivar used: the linden, cola de caballo (plant that looks like a horse tail), altamisa, wormwood, yantén; as well as the aromatic ones: mint, lemon balm, Melissa, cinnamon, limonaria, mint, fennel, camomile. For desserts, preserved foods and syrups: the plum trees after blooming contrast with the green of this space; pear trees, papayuelos (kind of papaya, smaller than this, that grows in cold regions), brevos, orange trees, curubos, uchuvas and wild strawberries.
